Current state of research and teaching activities
(1)逆ミセルによるタンパク質分子の抽出分離
有機溶媒中で形成される逆ミセルは、その内部微水相にタンパク質などの生体由来の機能性分子を取り込むことができるので、分離媒体として注目されている。本研究では添加すべき両親媒性分子のモル数とタンパク質分子の疎水性に量論的な相関が存在することを明らかにし、実用技術に向けた操作条件の基礎を構築した。
(2)W/Oマイクロエマルション系におけるリパーゼによる脂質の改質
疎水性基質による酵素反応をW/Oマイクロエマルション系で行う場合、反応活性を最大に引き出す可溶化水分量の存在を明らかにした。
(3)食品性有機ゲルを用いた固定化生体触媒
長期の酵素反応を行うため、レシチンを含むゼラチン由来のオルガノゲルにリパーゼを固定化し、1ヶ月月以上にわたる長期運転に成功した。
(4)超臨界二酸化炭素によって、茶および大豆からの機能性成分の分離を行い、アルコール添加の効果を求めた。また、配糖体などの物質の改質反応の媒体としての可能性を探索している。
(5)食品由来の生体高分子(ゼラチン・キトサン・セルロースなど)によって膜を調製し、物質分離膜としての利用可能性並びに透過特性の解析を行う。
